Ideas for a Healthy Lunch at Work

Turn Taco Tuesday’s dinner into Wednesday’s healthy lunch by packing (whole grain) taco shells, seasoned lean ground turkey or pork, lettuce and cherry tomatoes. Top broccoli slaw with dried cranberries and raspberry vinaigrette and you’ve got yourself a winning combination!

Here are more healthy lunch ideas for work. Keep it fresh by packing some ingredients separately and assembling at lunchtime.

  • Quinoa (cooks quickly the night before) with chopped pecans, dried cranberries, crumbled feta and warmed spinach
  • Half whole-wheat pita filled with chicken or tuna salad, side salad topped with grapes and mandarin oranges
  • Whole-wheat tortilla filled with fat-free refried black beans, lite shredded Mexican-blend cheese, lettuce and tomato, apple slices on the side (keep them fresh by sprinkling with lemon juice the night before)
